Dear Bill & Susan:
I just wanted to take an opportunity to write to you and let you know how much I enjoyed attending your Ice Cream School.

As you are aware, I am anticipating opening my own ice cream store in the near future. I had all the ambition in the world, but without the knowledge and experience that you have shared with me, I don't believe there would have been any way to achieve this dream. By spending the time with you, I feel I have learned the following lesson:

1. How to open and close the store, which included health department rules and
regulations, which I felt was a very important lesson.
2. How to manage the store and the employees; to include scheduling, payroll,
hours of operation, incentives, etc..
3. How to order supplies from suppliers and who they are and where to find them.
4. How to prepare for and make the different ice creams, shakes, cakes, cones
pies, etc.
5. How to clean and maintain all of the equipment.
6. How to maintain a good customer base and a good product base.

There is too much to list. What is obvious to me is that without your school, I would have been totally unprepared for a majority of what is to be expected of me when I open my own store. I cannot express in words how much your course has taught me. Your course was money well spent.
I also cannot express how much I enjoyed your company. You are two of the nicest people I’ve met in a long time. What a pleasure it was learning from and getting to know both of you.
